I wanted to do some sort of Christmasy post, but its been so hot out that its been tough to really get in the Christmas spirit. So in the meantime, while I wait for the cold weather, I decided to make a not so Christmassy, but very easy and healthy, burrito bowl.
I feel like burrito bowls are everywhere these days. From Chipotle, to Chilis… to just about everywhere else. When I recently came across a variety of burrito bowls on a restaurant menu I thought to myself how incredibly easy it would be to make one at home. So that’s what I did.
4 cups cooked brown rice
1 can black beans
1 can diced tomatoes with green chilis
1 can sweet corn
2 cooked, shredded chicken breast
1 tbsp chili powder
1 tsp garlic powder
1/4 tsp cayenne pepper
Dash of seasoned salt
salt and pepper to taste
Mix the tomatoes and chilis with brown rice in a large bowl. Add your spices. If you want this spicier feel free to add more. Drain corn and black beans and add to the rice. Mix in shredded chicken. Top with avocado.
And its as simple as that. This could easily be customized as well. You could add ground beef or turkey instead of chicken, or even leave the chicken out to make it vegetarian. I also think sautéed onions or bell peppers would be a pretty good addition.
This is a super simple, healthy, and delicious weeknight meal that could work out especially well during the holidays when you’re busier than normal.
