Made to Order is back from the dead!

I’m starting a new chapter of my education/life/career this week, so I figured I would start it on a healthy note. This week marks the beginning of my Dietetic Internship. The beginning of the end. A year from now I will finally be finished with this 7 year educational journey and join the real world. I’m excited for everything I’m going to learn this year, and will hopefully actually figure out what I want to do in the real world.

While I’m still figuring all of that out, there is one thing I know. I like food. I like to eat food, I like to cook food, and I also like to take pictures of food. Every moment of free time this past year has been filled with work, school work, studying, sleeping, or just generally trying to keep myself sane, which is why I kind of gave up on the blogging thing. However, during my internship I will only be taking one class, and while it’ll be a lot of hard work and a lot of hours, I may actually get a taste of a “normal” schedule. That being said, I mayyyy actually have free time, and I want to fill it with something I enjoy. As I mentioned, that is eating food, cooking food, and taking pictures of food. Thus, this blog is back from the dead.

This recipe is a current favorite of mine. Its super easy and super healthy, and can honestly be adapted to pretty much anything you want it to be. Also, please excuse the photo quality. I spilled water on my computer, yada yada yada, I don’t have Photoshop at the moment. Hopefully it’ll be back soon. Anyways, on to the quinoa salad!

Quinoa Salad

Quinoa Salad
Quinoa Salad | Made to Order

1 cup uncooked quinoa
1 cup spinach- chopped
1/2 avocado
1/3 cup Craisins or Pomegranate seeds
1/2 Tbsp olive oil
1 Tbsp lemon juice
Salt and pepper
Handful of Goat cheese
Shredded chicken (optional)

1. Rinse your quinoa and place it in a medium size saucepan with 2 cups water. Bring quinoa and water to a boil, then lower heat and cover. Stir the quinoa every 5 minutes or so until all of the water has absorbed. Remove from heat and add to a medium to large mixing bowl.
2. Chop spinach and dice avocado. Add those, as well as the craisins to your quinoa and stir together.
3. Add olive oil and lemon juice, as well as salt and pepper to taste.
4. If you are having this as a side dish, simply top with goat cheese. However, I like to have this as the main event, so I like to add some shredded chicken along with the goat cheese to make it a little more hearty.

And there you have it. Its as simple as that. This really is one of the easiest and healthiest dinners, or side dishes, I’ve ever made. Its also incredibly easy to change up if you want to. Hope you guys like it!
